Went out this week with my go to guide Capt. Mike of Dragon Fly Charters – and had a blast doing an inshore Florida Small Slam. Several Spotted Trout including 1 keeper. Snook and several Redfish including the 24″ keeper shown. All were caught tossing live shrimp along the mangroves in shallow water. I even tossed a Ladyfish to a hungry dolphin!
I also discovered my favorite new recipe for Redfish – Blackened on the Half Shell. Simply leave the skin and scales on the filets, brush with oil or butter and sprinkle with your favorite rub or other spices. Oil a hot grill and cook skin side down for ~5 minutes, turn and cook another 2-3 minutes. Super easy and tasty! The picture shows my cooked fish on a pizza tin for two nice dinner meals.
